Eat Your Veggies, And Read About Them, Too

The only “fresh” veggies we had access to in school were canned green beans ladled out by the hair net wearing cafeteria ladies. In high school it was a banner occasion to get a salad bar. I still remember piling on too much shredded cheese and too many fake bacon bits.

Kimberly Williams-Paisley, actress and wife of country music star Brad Paisley, has written the children’s book “Henry and the Hidden Veggie Garden” in support of the Love Your Veggies Nationwide School Lunch Campaign sponsored by Hidden Valley. Hidden Valley recently awarded $10,000 nutrition grants to 51 U.S. elementary schools to help increase access to fresh produce.

Kimberly and her husband and young son Huck, born in 2007, live on a farm in Tennessee. She wrote the book along with her father, Gurney Williams III, a writer an editor for more than 40 years.

An excerpt from the intro explains her inspiration for the book project…

“I’ve realized that as a parent, I have to work hard to create the environment I want my child to grow up in, and dI have to live the values I want my child to learn. As a veggie lover, it’s hard for me to watch when kids turn up their noses at delicious, fresh food. I want my family to appreciate and enjoy a balanced meal.”

We have planted a small tomato and herb garden in our backyard. We are also very fortunate to be able to visit a huge country garden planted by my father-in-law’s cousin. It’s a 40-minute drive, though, so we don’t visit it as often as we’d like. We also live near several produce stands. Although we live in a suburb of Nashville, just a short drive out of town takes you to farm land and crops.

We do have a garden, and get more than our fill of zucchini and tomatoes. I’m hoping we’ll up our production of green beans and peppers this year, too.

I tried to sign up for a fruit share from a local farm, but it was sold out. Next year I know to check when it still feels like winter! We also have a small farmer’s market in town, but my vice there is the homemade cheeses.

We have a small garden and buy rest of our veggies/fruits at a local farmer’s market.

We have a local farmer’s market which we try to go to every weekend. My daughter has loved going there since she was a little baby! It is really the only place where she willingly sits in her stroller!

My parents and my in-laws also have gardens. Even though both sets of parents are empty nesters they still have HUGE gardens so we also get a lot of fresh veggies from them as well.

Well I plan to go to the local farmer’s market on weekends. Also we’re mainly a vegetarian family, it’s easy for us to make veggie dishes.

I go to a Farmer’s Market every Thursday (well, every Thursday other than today… a girl is allowed to be lazy occasionally).
I’m planning to start a vegetable garden, but we’re planning on moving, so that’s going to have to remain on hold until we move into a new place.

Our first 1 year anniversary here and I planted our first garden so we shall have tomato’s, pumpkins, watermelon and our iguana has his own section :)
with limas and salad mix.
I am eating more and more salads these days as long as they have Blue Cheese dressing…

I haven’t figured out how to garden in the south yet. So we some fresh veggies from my MIL, and the rest from a local roadside stand. Love those summer veggies!

We get most of our veggies from the local Farmer’s Market. This year we’re also trying our luck with a few tomato plants at home.

We have tons of local farmstands near us as we’re right in the Michigan fruit belt. It’s wonderful!
